Background

Alcohol is an important industrial raw material widely applied to various fields of food, medicine, chemical industry, scientific research and the like. At present, the alcohol production in China is greatly developed, the production enterprises with alcohol are continuously increased nowadays, the annual output is positioned in the third world, however, many alcohol enterprises still use the traditional production process so far, the production process steps are far behind the advanced production level in China, the production efficiency is low, and the cost is high.

(2) The alcohol production process with high alcohol yield of the invention comprises the steps of adding fermentation master batch, alpha-amylase and fermentation accelerator for fermentation, wherein the fermentation accelerator comprises tea saponin, calcium phosphate and bran to provide nitrogen source for yeast and provide nutrition required by the yeast, thus improving fermentation activity, improving fermentation rate, leading fermentation to be thorough, reducing residual sugar and improving alcohol conversion rate, phosphorus is a necessary nutrient element for yeast proliferation, the calcium phosphate fermentation improves cell budding, thus improving alcohol fermentation, the tea saponin addition has a certain promotion effect on fermentation, and the tea saponin, the calcium phosphate and the bran are used as the fermentation accelerator in a synergistic manner, thus leading the process to obtain the highest alcohol content and lower reducing sugar and residual sugar contents.

Example 1

A process for producing alcohol with a high alcohol yield, wherein: the method comprises the following steps:

s1, crushing dry sweet potatoes with skins into sweet potato starch, sieving the sweet potato starch with a sieve of 40-60 meshes, taking oversize products and undersize products as raw materials for preparing powder slurry, and preparing the powder slurry with the concentration of 40 wt% with water;

s2, adding amylase into the slurry, wherein the addition amount of the amylase is 12u/g, adding a stabilizer which is calcium hydrophosphate and L-arginine, the addition amount of the calcium hydrophosphate is 0.05% of the total mass of the slurry, the addition amount of the L-arginine is 0.01% of the total mass of the slurry, and then carrying out liquefaction treatment at 85-105 ℃ for 120min to obtain liquefied slurry;

s3, adding saccharifying enzyme and xylanase into the liquefied slurry, wherein the adding amount of the saccharifying enzyme and the adding amount of the xylanase are both 150U/g, and carrying out saccharification treatment for 45min at the temperature of 50-60 ℃ to obtain saccharified slurry;

s4, adding 0.4ml/g of yeast master batch, 60U/g of alpha-amylase and a fermentation promoter into the saccharified slurry for fermentation at the temperature of 30 ℃ for 96 hours, wherein the fermentation promoter comprises tea saponin, calcium phosphate and bran, the addition of the tea saponin is 0.001% of the total mass of the saccharified slurry, the addition of the calcium phosphate is 0.004% of the total mass of the saccharified slurry, the addition of the bran is 0.01% of the total mass of the saccharified slurry, and distilling fermented mash to obtain alcohol.

Example 2

A process for producing alcohol with a high alcohol yield, wherein: the method comprises the following steps:

s1, crushing dry sweet potatoes with skins into sweet potato starch, sieving the sweet potato starch with a sieve of 40-60 meshes, taking oversize products and undersize products as raw materials for preparing powder slurry, and preparing the powder slurry with water into 42 wt% of powder slurry;

s2, adding amylase into the slurry, wherein the addition amount of the amylase is 15u/g, adding a stabilizer which is calcium hydrophosphate and L-arginine, the addition amount of the calcium hydrophosphate is 0.06% of the total mass of the slurry, the addition amount of the L-arginine is 0.2% of the total mass of the slurry, and then carrying out liquefaction treatment at 95 ℃ for 60min to obtain liquefied slurry;

s3, adding saccharifying enzyme and xylanase into the liquefied slurry, wherein the adding amount of the saccharifying enzyme and the xylanase is 200U/g, and carrying out saccharification treatment at 55 ℃ for 30min to obtain saccharified slurry;

s4, adding 0.6ml/g of yeast master batch, 80U/g of alpha-amylase and a fermentation promoter into the saccharified slurry for fermentation, preferably, the fermentation temperature is 32 ℃, the fermentation time is 70 hours, the fermentation promoter comprises tea saponin, calcium phosphate and bran, the addition amount of the tea saponin is 0.005% of the total mass of the saccharified slurry, the addition amount of the calcium phosphate is 0.02% of the total mass of the saccharified slurry, the addition amount of the bran is 0.06% of the total mass of the saccharified slurry, and distilling fermented mash to obtain alcohol.

Example 3

A process for producing alcohol with a high alcohol yield, wherein: the method comprises the following steps:

s1, crushing dry sweet potatoes with skins into sweet potato starch, sieving the sweet potato starch with a sieve of 40-60 meshes, taking oversize products and undersize products as raw materials for preparing powder slurry, and preparing the powder slurry with water into 46 wt% of powder slurry;

s2, adding 18u/g of amylase into the slurry, adding a stabilizer, wherein the stabilizer is calcium hydrophosphate and L-arginine, the adding amount of the calcium hydrophosphate is 0.1% of the total mass of the slurry, the adding amount of the L-arginine is 0.5% of the total mass of the slurry, and then liquefying at 105 ℃ for 30min to obtain liquefied slurry;

s3, adding saccharifying enzyme and xylanase into the liquefied slurry, wherein the adding amount of the saccharifying enzyme and the xylanase is 250U/g, and carrying out saccharification treatment for 25min at the temperature of 60 ℃ to obtain saccharified slurry;

s4, adding 0.8ml/g of yeast master batch, 100U/g of alpha-amylase and a fermentation promoter into the saccharified slurry for fermentation at 37 ℃ for 48 hours, wherein the fermentation promoter comprises tea saponin, calcium phosphate and bran, the addition of the tea saponin is 0.01 percent of the total mass of the saccharified slurry, the addition of the calcium phosphate is 0.04 percent of the total mass of the saccharified slurry, the addition of the bran is 0.1 percent of the total mass of the saccharified slurry, and distilling fermented mash to obtain alcohol.

Comparative example 1

A process for producing alcohol with a high alcohol yield, wherein: the method comprises the following steps:

s1, crushing dry sweet potatoes with skins into sweet potato starch, sieving the sweet potato starch with a sieve of 40-60 meshes, taking oversize products and undersize products as raw materials for preparing powder slurry, and preparing the powder slurry with the concentration of 40 wt% with water;

s2, adding amylase into the powder slurry, wherein the addition amount of the amylase is 12u/g, and then liquefying at the temperature of 85-105 ℃, wherein the liquefying time is 120min, so as to obtain liquefied slurry;

s3, adding saccharifying enzyme and xylanase into the liquefied slurry, wherein the adding amount of the saccharifying enzyme and the adding amount of the xylanase are both 150U/g, and carrying out saccharification treatment for 45min at the temperature of 50-60 ℃ to obtain saccharified slurry;

s4, adding 0.4ml/g of yeast master batch, 60U/g of alpha-amylase and a fermentation promoter into the saccharified slurry for fermentation at the temperature of 30 ℃ for 96 hours, wherein the fermentation promoter comprises tea saponin, calcium phosphate and bran, the addition of the tea saponin is 0.001% of the total mass of the saccharified slurry, the addition of the calcium phosphate is 0.004% of the total mass of the saccharified slurry, the addition of the bran is 0.01% of the total mass of the saccharified slurry, and distilling fermented mash to obtain alcohol.

Comparative example 2

A process for producing alcohol with a high alcohol yield, wherein: the method comprises the following steps:

s1, crushing dry sweet potatoes with skins into sweet potato starch, sieving the sweet potato starch with a sieve of 40-60 meshes, taking oversize products and undersize products as raw materials for preparing powder slurry, and preparing the powder slurry with water into 42 wt% of powder slurry;

s2, adding amylase into the slurry, wherein the addition amount of the amylase is 15u/g, adding a stabilizer which is calcium hydrophosphate and L-arginine, the addition amount of the calcium hydrophosphate is 0.06% of the total mass of the slurry, the addition amount of the L-arginine is 0.2% of the total mass of the slurry, and then carrying out liquefaction treatment at 95 ℃ for 60min to obtain liquefied slurry;

s3, adding saccharifying enzymes into the liquefied slurry, wherein the adding amount of the saccharifying enzymes is 200U/g, and carrying out saccharification treatment at 55 ℃ for 30min to obtain saccharified slurry;

s4, adding 0.6ml/g of yeast master batch, 80U/g of alpha-amylase and a fermentation promoter into the saccharified slurry for fermentation, preferably, the fermentation temperature is 32 ℃, the fermentation time is 70 hours, the fermentation promoter comprises tea saponin, calcium phosphate and bran, the addition amount of the tea saponin is 0.005% of the total mass of the saccharified slurry, the addition amount of the calcium phosphate is 0.02% of the total mass of the saccharified slurry, the addition amount of the bran is 0.06% of the total mass of the saccharified slurry, and distilling fermented mash to obtain alcohol.

Comparative example 3

A process for producing alcohol with a high alcohol yield, wherein: the method comprises the following steps:

s1, crushing dry sweet potatoes with skins into sweet potato starch, sieving the sweet potato starch with a sieve of 40-60 meshes, taking oversize products and undersize products as raw materials for preparing powder slurry, and preparing the powder slurry with water into 46 wt% of powder slurry;

s2, adding 18u/g of amylase into the slurry, adding a stabilizer, wherein the stabilizer is calcium hydrophosphate and L-arginine, the adding amount of the calcium hydrophosphate is 0.1% of the total mass of the slurry, the adding amount of the L-arginine is 0.5% of the total mass of the slurry, and then liquefying at 105 ℃ for 30min to obtain liquefied slurry;

s3, adding saccharifying enzyme and xylanase into the liquefied slurry, wherein the adding amount of the saccharifying enzyme and the xylanase is 250U/g, and carrying out saccharification treatment for 25min at the temperature of 60 ℃ to obtain saccharified slurry;

s4, adding 0.8ml/g of yeast master batch, 100U/g of alpha-amylase and a fermentation accelerator into the saccharified slurry for fermentation at 37 ℃ for 48 hours, and distilling fermented mash to obtain alcohol.

Comparative example 4

A process for producing alcohol with a high alcohol yield, wherein: the method comprises the following steps:

s1, crushing dry sweet potatoes with skins into sweet potato starch, sieving the sweet potato starch with a sieve of 40-60 meshes, taking oversize products and undersize products as raw materials for preparing powder slurry, and preparing the powder slurry with water into 46 wt% of powder slurry;

s2, adding 18u/g of amylase into the slurry, adding a stabilizer, wherein the stabilizer is calcium hydrophosphate and L-arginine, the adding amount of the calcium hydrophosphate is 0.1% of the total mass of the slurry, the adding amount of the L-arginine is 0.5% of the total mass of the slurry, and then liquefying at 105 ℃ for 30min to obtain liquefied slurry;

s3, adding saccharifying enzyme and xylanase into the liquefied slurry, wherein the adding amount of the saccharifying enzyme and the xylanase is 250U/g, and carrying out saccharification treatment for 25min at the temperature of 60 ℃ to obtain saccharified slurry;

s4, adding 0.8ml/g of yeast master batch, 100U/g of alpha-amylase and a fermentation accelerator into the saccharified slurry for fermentation at 37 ℃ for 48 hours, wherein the fermentation accelerator comprises calcium phosphate and bran, the addition amount of the calcium phosphate is 0.04% of the total mass of the saccharified slurry, the addition amount of the bran is 0.1% of the total mass of the saccharified slurry, and distilling fermented mash to obtain alcohol.

The results of the performance tests of examples and comparative examples are shown below, and the results are shown in Table 1

Comparing examples 1-3 with comparative examples 1-4, it can be seen that the ethanol content in the fermentation broth obtained by the production process of the present invention is above 16.2% (v/v).
